Here is a simple recipe on how to make the perfect pilau. Say no to ' pilau njeri' ...lol

INGREDIENTS.

Pilau mix ( whole spice)

Pilau masala

Tumeric

Fresh garlic (ground)

Beef cubes

Ginger ( ground)

Diced beef

Beef stock

Vegetable oil

Tomatoes ( grated)

Red Onions ( diced)

Rice

Salt to taste

PROCEDURE

On a pan, roast the pilau whole spice mix for 30 minutes.

Remove the spices from the pan and blend them to a powder form.

Pour some vegetable oil in a sufuria and add the blended spice into the oil. Stir it and let it cook for a minute.

Add the red diced onions and let it cook until they turn to golden brown.

Add the ginger- garlic paste and tumeric and let them cook for almost two minutes.( make suse your spices cook well)

Add the grated tomatoes and let it cook until you cannot taste the taste ( for lack of a better word) of raw tomatoes.

Add the diced beef and mix well with the spices.

Add the rice and stir well, mixing it into the paste.

Add the beef cube spice and salt to taste.

To enhance the pilau taste, add two more teaspoons of pilau masala spice and mix well with the rice..

let it cook for two minutes while stiring to ensure that the rice does not burn at the bottom.

Add the beef stock and let it simmer for a minute.

Add the required amount of warm water and stir only twice.

Cover it and let it boil.

When the water is almost done, cover the sufuria with a damp newspaper, followed by the lid.

Put some few pieces of hot charcoal on all corners of the lid.

Check to see if ll the water has eveporated.

Serve and enjoy.
