CHICKEN CURRY

Make sure to try this one. You will no regret it. Still one of my favorites to date. YUMMERS!!!

INGREDIENTS

1 red onion ( diced)

freshly squeezed lemon juice

salt ( to taste)

1 teaspoon ginger powder/ fresh ginger ( grounded)

2 tablespoons curry powder

2 teaspoons sugar

1 can coconut milk

boneless chicken

PROCEDURE

On a hot pan, put in some cooking oil and add the diced onions .

After a minute, add the curry and ginger powder and stir as they continue to cook until the onions are almost turning golden brown.

Add the sugar and let it cook for 2 minutes.

Now put in the coconut milk and stir it and then let it simmer until it boils. MAKE SURE IT BOILS!!

After it boils, now you can add the boneless chicken ( i did mine manually) and mix it well with the coconut mixture. Mine did not need to simmer for long because it was per- boiled. If yours is raw, make sure it simmers for longer to make sure it cooks well.

Add the freshly squeezed lemon juice, giving it one stir and remove it after 30 seconds.

Serve alongside a bowl of rice
